A large butcher's block, the smell of charcoal and a meal ageing cabinet containing impressive carcasses: this is o bona fide meat restaurant.
Freedom in the kitchen is a prerequisite for chef Nicolas Wentein. Recipes are not for him. The meat may be the star of the show but the chef also devotes a great deal of attention to the side dishes.
