Stoemp is a typical and simple Brussels dish, which you have to try when spending time in the Flemish capital.

Carrot stoemp recipe


It consists of pureed potatoes one or several mashed vegetables, sometimes also with bacon. These vegetable pairings traditionally include endive, kale, Brussels sprouts, spinach, turnip greens, carrot or onion. Stoemp is usually served with sausage or stewed meat.


  • 500 g/17,6 oz carrots
  • 500 g/17,6 oz potatoes
  • 1 coarsely chopped onion
  • sausage
  • salt and pepper
  • nutmeg

Cooking directions

  • Boil the carrots, potatoes and onion together in a saucepan
  • Drain and mash
  • Season with salt, pepper and nutmeg
  • Finish by adding a little milk and possibly a few knobs of butter
  • Fry the sausage and serve it with the stoemp.
