At M-Bistro, chef Mattias Maertens is a master of all techniques and cooking styles. Yet he returns to the basics in the creation of his dishes. According to Mattias, a dish can’t be tasty without craftsmanship and passion for the product. From his semi-open kitchen, he sets up a weekly market menu based on his own harvest and the products offered to him by local suppliers. Under the heading 'Sightly Different' he focuses on what he does best: infusing contemporary gastronomy with a homely atmosphere.
