Mistinguett is Francesca Sterckx’s entry into the bistro world. She focuses on French and Belgian classics, and in doing so creates new classics from seemingly simple products such as shrimp, veal and pollack. Single-handedly in the kitchen, she makes clever choices and transforms her experience at classical temples such as Maison Bru, De Tuinkamer and ’t Fornuis into a colourful philosophy.
