After his tutelage in the kitchens of Johan Segers, Viki Geunes and Joël Robuchon, chef Thijs Vervloet has returned to his roots. His restaurant in Westerlo is an ode to his grandmother Colette. Under her approving eye - be sure to check out her handwritten recipes on the wall - the menu features ingredients such as sweetbread, langoustine and pheasant, while there’s also a cheese and dessert cart for your culinary enjoyment. Together with his partner Lore and sister Sofie, Thijs reinterprets contemporary French cuisine.
