Contemporary interpretaion of grandmother's dishes on the dyke with a view of the sea. The Contemporary, sleek decoration is understated and yet luxurious, in multiple shades of grey. Chef Frederik Deceuninck has e weakness for the classics. He takes the dishes further, omits what is unnecessary and serves them full of flavour, with a fine balance and changing structures.
