Patisserie Sarah Renson

Sarah Renson

Sarah Renson is a force of nature. Less than five years ago, she opened her first patisserie: a small shop with a production kitchen on Mechelsestraat in Leuven. It’s hard to believeshe is still so early in her career. Sarah has become a TV personality following her recent appearance on the popular program “Mijn Restaurant” and now has two shops in her hometown.

Baking small cakes

The most recent location combines a pastry shop with a spacious workshop kitchen and a production studio where her team not only bakes for their own pastry counter, but also for delicatessen supermarket Cru and a range of restaurants. “That’s how it all started,” says Sarah. “One of my friends asked me to bake cakes for her restaurant, and things took off from there.”

Flavour is everything

What stands out about Sarah is her boundless enthusiasm and down-to-earth attitude. "I never thought I would become a pastry chef, I just fell into it. Some old friends still find it hilarious that I have a job that requires so much precision. Although I can see the link with my art education, because you can turn a cake into a little work of art. Our blood orange cake, for example, is almost a painting, with wavy lines of whipped white chocolate ganache and bright accents of fresh blood orange." After training in bread and pastry making, Sarah went on to work in the kitchens of Michelin-starred restaurants such as The Jane. Here she learned to make refined patisserie and where her love of good food really took root. “That said, I don’t make delicate mousse cakes with mirror glaze in my own kitchen. I love more rustic pastries and am increasingly focusing on the essence: taste. I mercilessly discard anything that doesn't contribute to that. My favorite cake at the moment is a frangipane cake with apricots. Delicious buttery puff pastry, rich almond paste with a hint of salt, and then fresh, fruity apricots with charred edges."

The nostalgia of a Berlin ball

Sarah’s talent for creating a buzz was evident when her boules de Berlin— pillowy balls of fried yeast dough filled with pastry cream—went viral during the pandemic. They were only baked one day a week, and everyone wanted to get their hands on one. There were endless posts on social media as the customers who formed a long line in front of the shop. “We still bake boules on Fridays and Saturdays,” says Sarah. “We do it for a few months at a time, and then we stop again. That way, they keep their sense of surprise. A boule de Berlin also carries a strong sense of nostalgia: you used to eat it on the beach. It's a comforting pastry with soft flavors and textures.”

Learning to make signature cakes

The workshop kitchen is impressive, with six fully equipped kitchen islands in a former motorcycle garage, which has now been given a new lease of life. It's the place where people can learn to make one of Sarah's signature cakes. “The people who come here are very diverse. From young girls with little baking experience to older people who have already made many cakes. Everyone comes here for a different reason: some to learn, others to have a fun evening.” Chef friends and artisan producers also share their knowledge in this space. “For example, we invited butcher Filip Rondou for workshops on sausage and pâté.” It's collaborations like these that energize Sarah. She also regularly invites Michelin-starred chefs to her studio. Together, they cook a dinner, with Sarah handling the sweet course. “Then it really has to be good, and that always gives me a healthy dose of stress. That’s what keeps me growing.”

Irresistible Bokkepootjes (ladyfingers)

Which pastry from her shop does she still eat every day? "A bokkepootje, I can't resist it. We sell almost 35,000 of them a year. Mind-boggling, right? Every day, I sneak to the fridge to get one. That combination of light almond sponge, buttercream, and crunchy chocolate: irresistible."

Late August and early September bring an abundance of fresh apples and pears. And in Borgloon, that also means: Loonse Stroop.

This thick, sweet fruit spread is traditionally made from apples and pears, slowly cooked down into a rich, dark syrup. Enjoy it on a slice of bread, pair it with cheese, or use it to add that signature sweet-and-sour depth to a traditional Flemish stew.
