«Aquí, los sabores y las impresiones nos llegan de todas partes», nos cuenta el chef de tres estrellas Viki Geunes. Habla de la ubicación especial de su restaurante Zilte, en la última planta del museo municipal MAS. La torre de ladrillos rojos y ondulantes paredes de cristal se eleva sobre Amberes. Los visitantes que salen por las puertas del ascensor no pueden evitar contener la respiración por un momento. La ciudad está a tus pies.

Cocina en constante movimiento

A través de una ventana, se ven los cargueros navegando en el Escalda. Si te giras un cuarto de vuelta, tienes una vista impresionante sobre el casco antiguo. En el lado opuesto, se ve el brillo de las luces del puerto. «Siento el movimiento constante a mi alrededor», dice Viki. «Y me encanta. Pruebo cosas y me quedo con lo que me parece bien. Lo demás, lo descarto. De este modo, mi identidad y la de mi cocina están en constante movimiento». «Lo que haces bien hoy, podrás hacerlo mejor mañana», es un lema que repite a menudo. Para lograrlo, necesitas una fuerte dosis de disciplina. Está claro que el chef no se duerme en los laureles. «Mi trabajo me encanta de verdad. Me da energía». 

Sabor intenso

En su cocina, el producto es lo primero. «Siempre cocino respetando al máximo el ingrediente. Por ejemplo, me gusta preparar rodaballo, un pescado noble del Mar del Norte. Lo combino con hortalizas tiernas, como hinojo tierno y nabos pequeños, que hago a la plancha, asadas o confitadas y que relleno con diversas guarniciones. Piensa en una delicada ensalada de almejas o caracoles diminutos condimentada con un jugo puro refrescado con verbena y melisa». Las verduras desempeñan un papel importante en la cocina de Geunes. Desde que trasladó su restaurante a Amberes, ha optado por ofrecer también un menú completamente vegetariano. «El lujo está en la calidad de las verduras. Una pequeño cogollo de lechuga cultivado en tierra tiene un sabor muy intenso. Encontrar al agricultor perfecto es una parte importante de mi trabajo».

Empresa familiar

Desde hace muchos años, Viki forma un dúo con su mujer Viviane Plaquet, que es la artífice del cálido ambiente que se vive en el comedor. En 2020, su hija Gitte también se incorporó al negocio. «Me da tranquilidad saber que somos una empresa familiar. Podemos comunicarnos sin muchas palabras y confiar al cien por cien el uno en el otro». Además de la cocina, la experiencia en Zilte también es algo fuera de lo común. «Queremos que todos se sientan a gusto. Por eso no tenemos un maridaje de vinos fijo, por ejemplo. Los clientes nos dicen en el momento cuánto y qué quieren tomar. Si observamos que a un comensal no le entusiasman los postres, le preparo algo a medida con mucho cariño».

Cocinar con chefs internacionales

Como chef autodidacta, Geunes tiene un perfil único en el estamento más alto de la gastronomía. «Estudiaba Ciencias Industriales. Durante el último año, lo dejé para centrarme por completo en la cocina. Siempre me ha gustado cocinar; mi madre me enseñó lo básico en su cocina. Después, mucha disciplina, trabajo duro y un equipo sólido como una roca hicieron que Zilte acabara siendo galardonado con tres estrellas». Ahora bien, para el chef la cosa no acaba con este galardón. «Tengo un espíritu cosmopolita y me gusta invitar a Amberes a chefs de todo el mundo. En Zilte, por ejemplo, ya he cocinado con el chef Dominique Crenn, del Atelier Crenn*** de San Francisco, y Eric Vildgaard, del Jordnær*** de Copenhague, entre otros. Este intercambio de ideas me inspira enormemente y a menudo culmina en nuevas amistades».
