«Dudaba entre montar una cafetería o una freiduría», ríe Sven De Ville al contar sus comienzos como propietario de una freiduría. «Mientras jugaba al fútbol, mi madre vino a recogerme al campo. Había visto una freiduría en venta. Me quité el uniforme de fútbol y fui directamente al local. El resto ya es historia».

De la mejor patata a las mejores patatas fritas

Durante diez años, Sven frio patatas fritas en el corazón de las Ardenas flamencas, el lugar donde las patatas especiales para el típico bol de patatas fritas flamencas crecen en un suelo firme y arcilloso. Aprendió el oficio entre los campos de patatas. Pero al cabo de una década, la bulliciosa ciudad le atrajo y trasladó su freiduría a Gante.

Allí, una clienta le llamó la atención. Evelyn trabajaba en una bocatería a la vuelta de la esquina y venía regularmente a comprar patatas fritas. Saltó la chispa y ahora la pareja trabaja junta en Frituur Tartaar. La bocatería se convirtió en su local de comida para llevar. Las patatas siguen siendo de las Ardenas flamencas. «El sabor es inigualable», dice Sven. «Creo que hay algo especial en la tierra. Solo quiero freír patatas fritas cultivadas allí. Llevo 16 años trabajando con el mismo proveedor, que distribuye la cosecha de patatas de los agricultores de la región». La patata frita perfecta es de la variedad Bintje.

«Las patatas fritas cortadas de Bintje se fríen crujientes, no se doran demasiado y son deliciosamente harinosas por dentro». A Sven le gusta comer sus patatas fritas con salsa samurai picante y una cucharada de pepinillos de Gante. Por su parte, a Evelyn le gusta la aventurera combinación de salsa joppie dulce, especias satay picantes, estofado vegano y pepinillos agrios.

Solo la mejor calidad

«Cuando probamos otra aburrida hamburguesa vegetariana, pensé: nosotros podemos hacerlo mejor. Desde entonces, somos conocidos por nuestra oferta casera vegetal». En una ciudad progresista como Gante hay mucha demanda de este tipo de producto».

Otro requisito para unas patatas fritas perfectas es la grasa fresca. «Cambiamos nuestra grasa todos los días, nunca hacemos concesiones en este sentido. Si vamos a comprar patatas fritas y sentimos el olor acre de la grasa vieja, nos damos la vuelta inmediatamente. No puedes oler a freidora». Sven y Evelyn también tienen altos estándares de calidad para otros snacks de carne que sirven junto a sus patatas fritas. 

«Probamos todos los frikandellen del mercado para elegir los mejores. Nunca escatimamos en calidad». Por eso también elaboran ellos mismos gran parte de su oferta: desde estofado casero y hamburguesas hasta buñuelos vegetarianos de brócoli, hamburguesas vegetarianas y falafel vegano. «Las ofertas veganas que se pueden encontrar en los mayoristas no son espectaculares», comenta Evelyn. «Cuando probamos otra aburrida hamburguesa vegetariana, pensé: nosotros podemos hacerlo mejor. Desde entonces, somos conocidos por nuestra oferta casera vegetal». En una ciudad progresista como Gante hay mucha demanda de este tipo de producto».

Las patatas fritas, indispensables en la cultura gastronómica flamenca

En la ajetreada ciudad, muchos turistas también se acercan a la freiduría. «Nos horroriza que los clientes extranjeros pidan French fries», ríe Evelyn. «Entonces les decimos: de eso no tenemos», añade Sven. «Las patatas fritas son una parte indispensable de nuestra cultura gastronómica flamenca: todo el mundo, independientemente de su rango y estatus, va a la freiduría de vez en cuando. En nuestro local, todos los flamencos se reúnen para disfrutar de sus patatas fritas perfectamente fritas».
