‘Van alle kanten komen de smaken en indrukken hier aangewaaid’, vertelt driesterrenchef Viki Geunes. Hij praat over de bijzondere locatie van zijn restaurant Zilte, op de bovenste verdieping van stadsmuseum MAS. De toren van rode stenen en golvende glazen wanden rijst boven Antwerpen uit. Wie als bezoeker de liftdeuren uitstapt kan niet anders dan even zijn adem inhouden. De stad ligt aan je voeten.

Keuken in constante beweging

Door één raam zie je vrachtschepen voorbijvaren op de Schelde. Draai je een kwartslag, dan krijg je een adembenemend zicht op de oude stad. Aan de andere kant schitteren de lichtjes van de haven. ‘Ik voel de constante beweging rondom mij’, aldus Viki. ‘En daar houd ik van. Ik probeer dingen uit, wat bij me past neem ik mee. De rest laat ik weer los. Zo is mijn identiteit en die van mijn keuken voortdurend in beweging’. ‘Wat je vandaag goed kan, kan je morgen beter’ is een leuze die hij vaak herhaalt. Om dat waar te maken heb je een stevige dosis discipline nodig. De chef rust duidelijk niet op zijn lauweren. ‘Ik doe mijn job oprecht graag. Het geeft me energie.’ 

Intense smaak

In zijn keuken staat het product centraal. ‘Ik kook altijd met het grootste respect voor het ingrediënt. Zo gebruik ik graag tarbot, een edele vis uit de Noordzee. Ik combineer die met jonge groenten, zoals babyvenkel en kleine koolraapjes, die ik grill, rooster of konfijt en vul met verschillende garnituren. Denk aan een delicate salade van schelpjes of kleine wulkjes. Daarbij komt een pure jus die wordt opgefrist door ijzerkruid en citroenmelisse.’ Groenten spelen een belangrijke rol in de keuken van Geunes. Sinds de verhuis van zijn restaurant naar Antwerpen, kiest hij ervoor om ook een volledig vegetarisch menu aan te bieden. ‘De luxe zit in de kwaliteit van de groenten. Een piepklein kropje sla dat geteeld is in volle grond, heeft zo’n intense smaak. De zoektocht naar de juiste boer is een belangrijk deel van mijn werk.’

Familiezaak 

Al jarenlang vormt Viki een tandem met zijn vrouw Viviane Plaquet, zij zorgt voor de warme sfeer in de zaal. In 2020 is ook dochter Gitte in de zaak gestapt. ‘Het geeft me rust dat we een familiezaak zijn. We kunnen communiceren zonder veel woorden en vertrouwen elkaar 100%.’ Naast de keuken is ook de beleving in Zilte uit de kunst. ‘We willen dat iedereen zich comfortabel voelt. Daarom hebben we bijvoorbeeld geen vaste wijnpairing. Gasten geven op het moment zelf aan hoeveel en wat ze willen drinken Merken we dat een gast niet enthousiast is over de desserts, dan maak ik met veel liefde iets op maat.’

Koken met internationale chefs

Geunes heeft als autodidact een uniek profiel in het hoogste segment van de gastronomie. ‘Ik studeerde industriële wetenschappen. Tijdens het laatste jaar ben ik gestopt om mij volledig op de keuken te richten. Ik heb altijd graag gekookt, mijn moeder leerde mij in de basis in haar keuken. Daarna zorgden veel discipline, hard werk en een ijzersterk team ervoor dat Zilte uiteindelijk drie sterren verdiende.’ Al stopt het voor de chef niet bij deze bekroning. ‘Ik ben kosmopolitisch ingesteld en nodig graag internationale chefs uit in Antwerpen. Zo kookte ik in Zilte al samen met onder andere chef Dominique Crenn van Atelier Crenn*** uit San Francisco en Eric Vildgaard van Jordnær*** uit Kopenhagen. Zo’n uitwisseling van ideeën geeft me ontzettend veel inspiratie, en mondt vaak uit in nieuwe vriendschappen.’
