De tafels in groen marmer, donkerhouten lambriseringen en banken met zachte stof zijn relikwieën uit het rijke verleden van Café Du Parc. Toch werden ze onlangs grondig onder handen genomen: het chroom werd gepoetst, de banken opnieuw overtrokken, het hout kreeg een nieuw laagje vernis. De frisse wind die door deze iconische brasserie waait heet Shannah Zeebroek. Als geboren en getogen Oostendenaar durfde ze het aan om dit horeca-instituut over te nemen en naar haar hand te zetten.

Sterkhouder van restaurant Willem Hiele

Ze kreeg bekendheid in de horeca als sterkhouder van restaurant Willem Hiele in Koksijde. Als sommelier en maître zorgde ze er mee voor dat het restaurant een trekpleister werd voor foodies uit binnen- en buitenland. ‘Toen het restaurant stopte, wist ik zeker dat mijn toekomst niet in de gastronomie lag’, aldus Shannah. ‘Ik genoot ervan om de service tot in de puntjes te verfijnen, maar het feit dat het niet toegankelijk was voor een groot publiek stoorde me. Ik wil een verschil kunnen maken, daarom dacht ik eerst ook aan een job in de sociale en culturele sector als vervolg op mijn carrière.’  

Toen kwam er een voorstel waar ze – na lang nadenken – toch geen nee op kon zeggen. De nieuwe eigenaar van het Hotel Du Parc zocht een nieuwe uitbater voor de brasserie. ‘De passie voor horeca verdwijnt niet, dus toen dit project op mijn pad kwam begon het opnieuw te kriebelen. Ik had wel één voorwaarde: ik wilde mijn eigen koers kunnen varen. Daarom heb ik ook niemand van de oude equipe meegenomen in het nieuwe verhaal. Ik wilde niet constant horen hoe het er vroeger aan toe ging.’

Vitello maccarello

Na een intense renovatie heropende de brasserie in 2023 onder de nieuwe naam Café Du Parc. ‘In de kelder hebben we een grote professionele keuken geïnstalleerd. Dat is nodig omdat ik alle bereidingen in huis wil maken. Elke dag worden hier verse aardappelen geleverd mét schil. Daar maken we zelf frietjes en puree van. Ook de mayonaise is natuurlijk vers. Zulke details maken het verschil. Het enige wat we niet zelf maken, zijn de garnaalkroketten, omdat we duizenden kroketten per week serveren. Ze worden in Oostende gemaakt, naar een recept van mijn lief Tom. Als je goed proeft kan je een vleugje rode curry en kaffirlimoen ontwaren voor wat extra pit en frisheid. Maar geen paniek: het is heel gebalanceerd en subtiel. Het blijft een klassieke Oostendse garnaalkroket, maar met een kleine twist.’ In deze klassieke setting hoort een menukaart vol klassiekers en dat maakt Café Du Parc waar. Denk aan zeetong, steak tartaar, toast champignon. ‘Toch durven we ook aanpassingen te doen: zo serveer ik geen vitello tonnato, wel een vitello maccarello met makreel in plaats van tonijn. Ik gebruik enkel vis uit de Noordzee.’

Van basiswijn tot exclusief glas

Als sommelier nam Shannah de drankenkaart ook stevig onder handen. Hier kun je maar liefst 25 wijnen per glas bestellen, van basiswijn tot exclusief glas. ‘En belangrijk: we schenken champagne per glas, altijd uitgeschonken aan tafel. Dit vind ik een must voor een goede brasserie. Cava vind je hier niet, wel een Belgische schuimwijn als alternatief. Die wisselt elk seizoen, net als de rest van de wijnkaart. Ik heb lang gezocht naar de huiswijn. Vaak is dit een goedkope wijn. Ik vind het net het visitekaartje van een brasserie.’

’Destination brasserie’

Voor de toekomst ziet Shannah Du Parc als een echte destination brasserie. ‘Als mensen naar België komen voor Boury*** of Willem Hiele*, hoop ik dat ze hier halt houden voor klassiekers, als vast onderdeel van hun culinaire trip.’
